Ingredients :
3 c. skinless, boneless chicken breast, cut into strips
2-3 potatoes, cubed
2 med carrots, cubed
1 green bell pepper, julienne
1 red bell pepper, julienne
2 onions, halved and sliced thinly
1 can of condensed cream of mushroom soup
2 c. chicken broth
2 T butter
salt and pepper
Directions:
Melt the butter in a heavy saucepan or casserole.
Sauté onions until soft. Add the chicken and brown. Cook until almost done.
Add carrots, potatoes and bell peppers.
Cook over medium-high heat for a minute.
Pour in 2 c. of broth and bring to a boil. Season with salt and pepper
Lower the heat, cover and simmer for 8-10 minutes or until the vegetables are done.
Add cream of mushroom soup. Mix well. Adjust seasoning
