Lemon Braised Pork

I had a bunch of lemons left from this detox that I did and was also craving some pork adobo. I figured, why not adobo with a twist?

Ingredients:
1 1/2 lb. pork butt, cut into 1 1/2" cubes
1/3 c lemon juice
lemon peel (half a lemon) cut into wedges
1/4 c mushroom flavored dark soy sauce
6 garlic cloves, pounded
2 bay leaves
1/8 t dried oregano
1/4 t peppercorns, cracked
1 T golden brown sugar
1/4 c water
1 t salt
5 hard boiled eggs, shelled

Directions:
Combine all ingredients in a pan except eggs
marinate pork for about 15 minutes
Over medium heat, bring to a boil then simmer for 30 minutes, covered
Add hard boiled eggs, making sure eggs are covered with the sauce.
simmer for another 30 minutes, uncovered
Remove from heat & remove pork pieces. Set aside
Over medium high heat, brown pork pieces in a skillet (no oil needed)
Add the sauce & eggs to the meat. Mix well and serve
